The biology of apple storage is based on the morphological structure of apple trees, their specific ripening process, which can be characterized by changes in climatic respiration, and their post-ripening in a refrigerated and altered atmosphere. In the case of these fruits, the ripening processes start perceptibly, but their full course can be slowed down by means of storage technology. As we strive to slow down the ripening of apples or pears, there are changes in the life of the fruit that the consumer only accidentally encounters. Adverse lesions of non-parasitic origin during storage, the so-called physiological diseases, pose a serious risk to apple growers. These diseases, once they have occurred, cannot be cured. Overcoming them is therefore limited to prevention, and since the cause of their development must be sought in biological disorders, we must be aware of the life of apples during and before storage. Storage biology begins in apple orchards, the history of the fruit is a crucial factor in the success of storage. Apple growers around the world are striving to produce apples that can be stored well, as they can only pay for their year - round work in the spring and summer of next year. By passing on the basics covered in this book, we aim to serve fruit growers and storage professionals with secondary and tertiary education.
